Vegan Mockuna Salad

Vegan Mokuna Salad

2 Cups cooked & rinsed chickpeas

1 Green onion

1 Celery stalk

1 garlic clove chopped

1 teaspoon fresh squeezed lemon

1/2 ripe avocado

1 teaspoon dried dillweed

½ cup soaked walnuts, pureed until a paste (walnuts soaked for minimum of 4 hours)

Fresh parsley

Salt & Pepper

Empty the chickpeas in a bowl and mash with a fork. Finely chop the veggies & parsley and add to the chickpeas. Add the avocado and walnut puree, salt & pepper to taste. Mix with a fork. Refrigerate before serving.
