Sourdough Gingerbread

Sourdough Gingerbread
1½ c. sourdough starter

½ c. raw butter

½ c. date sugar, turbinado, or maple syrup

1 c. black strap molasses

2 teaspoon masala or cinnamon

1 tsp. fresh grated ginger or 1/2 tsp dried ginger

½ tsp. salt

1/4 c cacao powder

1 c. einkorn flour

Preheat oven to 350 degrees.

Cream together butter and sugar.  Add molasses and beat well.

Add sourdough, cinnamon, ginger, salt and apple cider vinegar. Add flour and beat 2 minutes. Should be thick in texture.

Pour into greased and floured 9x9x2 pan, let sit tightly covered for 1 hour.

Bake for 55 minutes. Use a toothpick to test doneness. Cool.
