Sourdough Sugar Cookies

1 cup butter or coconut oil
1 1⁄2 cups sugar
3 large eggs
1⁄2 cup sourdough starter
1 1⁄2 teaspoons lemons or 1 1⁄2 teaspoons almond extract
1/2 teaspoon apple cider vinegar
1 teaspoon vanilla extract
4 1⁄2 cups all-purpose flour
1 teaspoon salt
Cut up soften butter or oil and press with sugar until well blended. Add in well beaten eggs, fed sourdough starter, extracts, vinegar. Slowly sift in flour and salt. Gently knead for 10 minutes. Put dough in greased bowl with cover and let sit in refrigerator overnight. On a well flour board (if you are gluten sensitive this is the time to either use arrow root or buckwheat or quinoa flour) roll out your dough to 1/4″ thick and cut with cookie cutters. Put on ungreased pan and cook at 350 for until very lightly brown. (this will vary based on oven but ~7-12 minutes)
