Sourdough Gingerbread Men

Sourdough Gingerbread Man Cookies

1 cup butter or coconut oil
2 cups turbinado or date sugar
1/2 cup blackstrap molasses
3 large eggs, well beaten
1⁄2 cup fed sourdough starter
1 teaspoon vanilla extract
1 tbsp ground ginger
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1 tbsp cacao powder
3 cups active sourdough starter
3 1⁄2 cups all-purpose flour (start with 2 cups and add more or less until it is a kneadable dough ball)
1 teaspoon salt

Cut up soften butter or oil and press with sugar until creamed. Add in mollasses, well beaten eggs, fed sourdough starter, vanilla, vinegar, cacao and spices. Slowly sift in flour and salt. Gently knead for 10 minutes. Put dough in greased bowl with cover and let sit in refrigerator overnight. On a well flour board (if you are gluten sensitive this is the time to either use arrow root or buckwheat or quinoa flour) roll out your dough to 1/4″ thick and cut with cookie cutters or press into a mold. Put on ungreased pan and cook at 350 for 10-14 minutes. For crispy cookies 20-25 mins. Let cool prior to eating to get full flavor!
