Yummy gut healing lemon pudding
Other ways to use your gelatin (gelatinous bone broth works also)
5 large egg yolks
4 lemons, zested and juiced – 1/4 cup lemon juice approximately
1 1/2 tablespoons plain unflavoured gelatin
1/2 cup maple syrup or manuka honey
3/4 cups whole fat coconut milk (no gums) or raw whole fat milk (or if you are very indulgent cream)
Whisk everything in a medium size sauce pan over medium low heat, stir frequently or use an immersion blender to get out any chunks. Continue to slowly whip until pudding sets on the back of the spoon, take off heat and stick into pudding bowls and set in fridge until cool. Top with raw whipping cream, grated lemons or cinnamon.

4 tablespoons melted cacao butter + 4 tablespoons cacao powder + 2 tablespoons maple syrup + 1 tspn vanilla extract. Stir well until smooth and cooled to 80 degrees. Pour into food grade silicon molds. Set in freezer for 30 minutes
