Fermented Cranberry Compote

one 12 oz. package of fresh cranberries
1 cup apple cider vinegar
½ cup honey…
1/4 cup ginger, chopped
1/2 cup currants
1 Fuji (or other crisp and sweet) apple, diced
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 teaspoon sea salt
½ teaspoon cloves
Pack all ingredients into a pint jar and seal tight. Let sit on counter 1-2 weeks. Then blend with immersion blender adding fresh fruit as needed to sweeten.
