Easy Fermented Fruit
4 cups favorite fruit (chopped up if an apple or apricot, not necessary if berries -
pitted also if cherries etc) Our favorites include berries, apricot, and cherries!
1/2 tsp whole cloves (you can also experiment with cardamom, cinnamon or vanilla bean!)
1 grated rind of lemon, orange or lime
1/2c sucanat
1/4 cup apple cider vinegar or whey
2 tsp sea salt
1/2c filtered water

Mix everything but water, let sit in bowl covered for 3 hours

Scoop into clean quart jar, pour water until fills to 1 inch headspace. If fruit popping up weigh down with a folded cabbage or grape leaf.

Seal tight at 60-70 degrees for 2 days, move to fridge for up to 2 months.
