Key lime nutrient dense treats
• ¼ cup currants
• ¼ cup raw shredded coconut
• 1 tablespoon raw sunflower seeds
• 2 tablespoons coconut oil
Put in a processor on high until a flour consistency
Press into the bottom of bpa-free silicon cupcake molds or paper cupcake molds
• ½ cup raw cashews, soaked in water overnight & drained or raw tahini
• 1/3 cup ripe avocado
• 4 tablespoons raw honey, maple syrup or sucanat
• 4 limes, juiced and zested
Blend above well with immersion blender until smooth, pour into molds.
Freeze for 2 hours, serve cold.
