Pumpkin Sweet Potatoes Chunky Gratin

3 lbs of sweet potatoes or Japanese yams

2 tablespoons pork or duck lard, or coconut oil

1 tablespoon Himalayan salt

2 cups pumpkin puree

2 tablespoons smoked paprika

2 cloves diced garlic

2 teaspoons turmeric

1 tablespoon maple syrup

1/2 cup shredded parmesan (optional )

In a large pot of water, dice to 1/2″ squares (keep peel on) potatoes and bring to a boil for 15 minutes or just soft.

Strain potatoes.  Coat generously with lard/oil and salt, put in a pyrex and bake at 350 for 15 minutes.

Mix spices, garlic, and syrup with pumpkin puree.  Pour over potatoes, gently tossing, top with optional parmesan, and cook for additional 10 minutes.

Serve warm.
